Born out of laziness and the unbearable heat we had last weekend. I decided that I could only handle making one thing at night using heat in my cracker-box apartment for my bento prep for the week, so this is what I went for:
Spicy Baked Tofu
-1 block of drained and pressed firm Tofu, thinly sliced
-5 Tablespoons of Dark Soy Sauce
-2 Tablespoons of Sriracha
-1 Tablespoon of dried Red Pepper
-2 Tablespoons of Lime Juice
****Note: This very spicy, if you don't like that much heat add less Sriracha and Red Pepper or more Lime Juice****
Mix the wet ingredients in a container to make a sauce, flip the slices of tofu in the sauce (there should be some left over). Place on a baking sheet greased with cooking spray. Bake at 325 F for 15 minutes. Take out of the oven and flip them over pouring/spooning the rest of the sauce on top, and bake another 10 minutes.
This has been really good as a sandwich topping (along with some cucumber, bell pepper, and dijon mustard) but it could be used in a non-sandwich bento just as easily.

I would prefer a little bit of cold to a heat wave in Spring, there is no escaping 100+ degree heat (~38 degrees C) that continues into the night.
I've a recipe very similar to this - I just add a lot of curry into the soy sauce instead of the Red Pepper. And if I feel like I'm up to something creamy, I'll put a bit of milk into it. Of course it's not vegan than, but most people I cook for aren't even vegeratrians, so it doesn't really matter. I've never tried the baking thing though - most of the times I just throw the tofu into the pan, and add the marinade. I guess I'll give the baking idea a try soon. Thanks for sharing that recipe! ^__^
Oh, and our weather is very nice here. Dry, sunshine, not too hot - about 27 celsius around noon. Spring is turning into summer.. :)
