*To the right, yummy yellow mango, edamame and an apple muffin.

I'm not sure about the leek dumplings, which I admit are store bought, but other than that it's all vegan, including the apple muffin (recipe on my blog).

In the top tier:
- vegetarian yellow thai curry (potatoes, carrots and brocolis)
- thai rice with wasabi sesame seeds
In the bottom tier:
- scallion pancakes
- cucumbers in a cup
- 2 pink radishes

Everything in this bento is homemade, even the scallion pancakes! And, this bento is even vegan. Maki, thank you so much for organizing this contest, it made me see how easy it is to make vegetarian bentos !

I'd like to enter two bento boxes. I've been practicing cooking onigiri and kinpira (both delicious!), but this is my first real try at putting together a bento... And I'm really excited about it, because it was so delicious, so colorful, and such a pleasure to eat. :)

I decided to go with something that really reminded me of summer -- cool earthy tasting rice, juicy strawberries, fresh cucumbers, and toasted hazelnuts, and creamy goat cheese.

This bento is vegetarian, but could easily be made into a vegan bento box by substituting the goat cheese with herb-grilled tofu, or with a tomato. You could also increase the protein in this bento by mixing edamame into the salad, or substituting forbidden rice with quinoa. If you're wanting to take a break from strawberries (I guess it could happen, maybe) or if strawberries aren't in season, this could bento could work just as well with other fruits such as mandarin oranges, plums, apricots, peaches, mango, or raspberries and blackberries. Additionally, you can add a bit of extra flavor by adding coconut milk or a coconut-based sauce (coconut milk, corn starch, sugar or honey, etc.) to the rice. (I found, though, that the natural flavor of the rice was delicious, and didn't even need the light drizzle of ginger syrup.)

My boyfriend, a little bit less into subtle flavors and much more into flavors with zing, got a spicy chili and citrus version of this bento.

The nut mix in his bento comes from Trader Joe's, but could easily be made at home by combining nuts of your choice (cashews, peanuts, or whatever you like best) with freshly chopped peppers or chillis.

Both bentos were quick to make -- the forbidden rice should be prepared the night before, but everything else can quickly be thrown together the following morning. Since I was expecting to have little time this morning, I made everything the night before -- and the strawberries were still fresh and juicy (and the lettuce and cucumbers crisp!) by the time I got to it at noon.

Hello, this is my first bento!!!

Sorry but I'm french and my english is not very good....

I was vegetarian before. Now I eat a little meat and fish, but not often.
I mix cereals and pulses for a good protein intake. And I eat cheese and eggs, and lots of vegetables and fruits.
Here are legumes dessert (mashed azuki beans).

Today I had fried rice with purple asparagus, kale, green onion, broccoli, tomato, ginger and a sauce made from soy sauce, mirin and chili paste. I actually started out using fish sauce then remembered I wanted to make it vegetarian so I dumped out the sauce and started over!! And I packed it in my new Abby Cadabby box from the dollar bin at Target! :D

Here is my entry for the May contest:

Here is recipe for the veggie burgers:
1 cup of oat flakes
1 cup of grated firm tofu
1 cup of grated raw vegetables (this time I used carrots, but it is yummy with broccoli, too)
1 tbs of curry powder
1tbs of cilantro or parsley, chopped
salt and pepper

Mix the oat with curry powder, salt and pepper. Add one cup of hot water and leave for 5 minutes.
Then mix all the other ingredients together and shape into small burgers shapes.
Put one tbs oil in a pan and fry them for about 5 minutes on each side.
I normally serve them with a tahine-yogurt dip sauce

Cucumber salad
Peel and chop 1/2 cucumber. Mix with 1/2 cup of coconut powder, 1 tbs chopped cilantro, salt, pepper and unsalted grilled cashew nuts. If you want add some olive oil and mix well. (I normally prefer without oil.) For this post, I decorated the salad with dry (eatable) flowers.

My Veggie Contest entry is filled with fried Maultaschen, the german (well, swabian) version of Let's-put-stuff-into-pasta-wrappers. These babies are from a batch i made and froze last week with button-mushroom-and-shallots-cream-ragout yummy-fied with tarragon-mustard and stabilized with Panko (instead of Breadcrumbs); milk-steamed Broccoli, sprinkled with Linseeds; half an Ajitama egg; balsamic pickled Baby-Onions sprinkled with Thyme; Cherry Tomatoes; red and yellow grapes; a Petit Four and Yogurt with blueberries decorated with Sage blossoms from my window sill
