I was at the farmer's market today and I saw tht thease gret turnips were on sale! I bought two bunches thinking I could cook some and quick pickle the rest to give as gifts to my friends thinking of the article here on just bento. Unfourtunately though maki mentioned using turnips for pickles but she didn't post what recipie would be good for them. So does anybody have a good recipie for pickled turnips? :D

One of the simplest ways to 'pickle' turnips is to peel them, slice them very very thinly (a mandoline would be good for this) and to sprinkle them with some salt and just massage them with your hands until they are a bit limp. Then leave for an hour or more. That brings out the flavors of the turnip and is a nice refreshing instant pickle. You can also try this method that I used for radishes, maybe changing the strawberry syrup for just sugar (to taste), or just leaving the sugar component out.
