Hi Maki,
I bought a really delicious salad dressing here in Japan, called "goma dressing," and I wonder if you know how to make it. It's light brown in color from the ground roasted sesame seeds. My children only eat salad if it has this sesame dressing on it! Thank you so much for your help.

Goma dressing just means a dressing with sesame flavor, so it has many variations. Is it clear or creamy? What brand?

The dressing is creamy (I don't think there's any cream in it, though), and the brand is Kewpie. It's not completely smooth, as the sesame is roughly ground up, giving it a little texture.

Ah yes, that ground up sesame is the key...and while it's possible to use tahini as a subtitute, or even buy ready-ground sesame, it really is a lot better when you grind freshly toasted sesame seeds yourself, using a suribachi.
Here's a simple sesame dressing though:
* 1/4 cup ground sesame or sesame paste or tahini (if using tahini, I'd add 1-2 tbs. of toasted sesame seeds for more toastiness)
* 1/4 cup rice vinegar, or 1/2 each (so 1/8 cup each) vinegar and lemon juice
* 1 tbs. sugar
* 2 tbs. soy sauce
* pinch salt
* 1-2 tbs. dashi stock or water + a pinch of dashi granules
Loosen up the ground sesame or tahini with the water or dashi, until it's more liquid rather than pasty. Combine all the ingredients in a jar and shake well until combined (or mix in a food processor or mixer). Store in the refrigerator.

anon, it keeps for quite a while, though I don't think it's ever lasted beyond a week for me.
