Miso Mustard Greens

This was an impromptu attempt to use up some turnip greens. I guess it is a kind of ohitashi.

1 small bunch turnip or other greens
Boil until done to your liking, drain and chop

2 tbsp white miso
1 tbsp mustard powder
about 1 tbsp mirin or cooking water, to smooth the sauce
mix this together until smooth and mix in with the chopped greens

This much mustard powder makes it very hot. You could cut back.

I love turnip greens and this looks like a delicious way to eat them.

Unfortunately, I find it really, really difficult to get hold of this vegetable. When I do see them, they're rarely organic and I have concerns as to how much pesticide there is on the leaves as so few people in England seem to eat them.

Nozawana pickles are amongst my favourite kinds. I can't wait until the day I get a garden or allotment I can grow turnips in, mainly so I can eat the greens. Hopefully I'll remember miso/mirin and a little mustard for the next time I can get my hands on these elusive leafy stalks.

You can soak them in a big bowl full of water with a drop (just a drop!!!!!!) of bleach to kill all the bacteria and wash them very well with water afterwards.... I guess it would do the trick :)

In this case my concern would be pesticides not bacteria. Goodness knows what would be used on a crop where only what grows underground is expected to be consumed.

Wow, I'm sorry to hear that. I'm from Alabama and live in Georgia, so I can't imagine life without greens! You might could do this with watercress, too.
