I think I need a "what to do now that you've purchased a whole lotus root" tutorial. Sure, I could google it, but why not go to the master? ^_^
I've never had lotus root, so I've certainly never cooked with it or prepared it. I just bought one at the market (it was two sections, one fat one and one that tapers at the end).
To put this into context, I want to make Maki's recent root veg & tofu stew.

I have eaten lotus root (like pretty shaped water chestnut, I thought), but I've never seen it for sale fresh. I have some dried, but cannot imagine that it could ever become crunchy again, and have never tried to do anything with it. So, Maki, maybe you could tell us about fresh AND dried lotus root?

How to cook lotus root.

I am not sure about dried lotus root. I guess you would soak it to reconstitute it before using. For convenience, if you can find it, canned, frozen or vacuum-sealed precooked lotus root slices are available. mosaica has a pic of a packet of pre-cooked lotus root here.
Bonus! How to cook taro root (satoimo). (Both articles are linked to from the root vegetables recipe btw)
Incidentally, the site search on these pages searches both Just Bento and Just Hungry. Just Hungry is where you will find more sort of basic how-to type of things for many foods used in Japanese cooking.
