My job runs off of 12 hour shifts, and many times gets kicked into overtime working sometimes 18 hours (I'm sure I'll have some 24 shifts as well in the near future).
This means I potentially consume EVERY meal of the day out of the house and was hoping to get at least two of those meals as bentos or carry to work as opposed to eating out all the time. What are your best ideas for keeping things cool while driving (I am an EMT so will be in a vehicle all day with my lunch with me) that won't end me with a soggy lunch/dinner/snack?

Before I went to hospital, we were often driving around all day in the heat of southern France picking up stuff for the house, and we wanted to keep our water and snacks cool and fresh. So we got a cooler that plugs into the cigarette lighter. It worked fairly well, provided we put ice packs from the freezer inside the morning - it didn't actually cool things down, but did keep things cool. The cooler wasn't that expensive either.

Insulated bag with chiller pad. So long as you don't have to carry it around in your bag, why not get a small polystyrene box you can keep in the car? I have a biggish one that I rescued from work (we get regular deliveries of frozen things that come in polystyrene boxes) and keep in the car for putting the frozen and cold groceries in on the way home from the shop. One of the small size ones that fits a six pack of beer should work for your lunch.
