dried vs. fresh shiitake mushrooms

In some recipes (sticky rice for example) it says that you need dried shiitake mushrooms. Is it possible to replache them with fresh ones? Has anyone tried this? And if so, do you use the same quantity and method of cooking? I'm lucky enough to be able to buy fresh ones here :D

You could use fresh shitake, but the flavor would be less intense than the same amount of the dried version. The texture would also be different.

agreed, the flavour would be less strong. use both if you have them!
just soak one ore two dried ones and use them and the soaking liquid for intense over-all mushroom flavour and add some fresh ones cut into larger slices for chewy texture and extra yummieness. hmmm, i haven't had fresh shiitake in a while..
